Oysters – 3 quick and tasty ways

Ingredients

12 Oysters

Classic Mignonette
2 tablespoons white wine vinegar
1 tablespoon red wine vinegar
½ shallot, finely chopped
Sea salt and cracked black pepper to taste

Mix all the ingredients

Fresh ginger and soy sauce
2 tablespoon rice wine vinegar
1 lemon, juice
1 tablespoon soy sauce
1 tablespoon *mirin
1 teaspoon freshly grated ginger
1 spring onion, finely sliced

Finely chop the spring onion and add grated ginger. Add a squeeze of fresh lemon juice. Spoon a tablespoon of soy sauce, mirin, and rice wine vinegar. Drizzle over oysters.

Thai-style coriander and lemongrass sauce
1 tomato
1 stick lemongrass, finely chopped
½ lime, juiced
1 teaspoon fish sauce
1 red chilli, finely chopped
1 tablespoon, fresh coriander roughly chopped

Grate the tomato. Finely chop the lemongrass and chilli and add to the tomato. Add the fish sauce, a squeeze of lime and fresh chopped coriander.

Drizzle sauce of your choice on freshly shucked oysters
